Cocktail di gamberetti con salsa rosa e lattuga filangè
Ingredienti
1 kg gamberetti in salamoia
300 g. lattuga o brasiliana
3 uova
200 g. olio di semi di mais
Sale \ pepe
2 limoni
Ketch-up q.b.
Olive nere
Procedimento
Scolare bene i gamberetti e lavarli in abbondante acqua, quindi lasciarli respirare all’aria .
Lavare la lattuga e lasciarla scolare bene .
A parte sbattere i tuorli ed a filo far scendere l’olio di semi riscaldato, quando la maionese è ben compatta aggiungere il sale e il succo di limone. Aggiustare con ketch-up brandy e worchester sauce.
In una coppetta adagiare la lattuga tagliata a julienne ( meglio sempre tagliare la lattuga all’ultimo momento altrimenti diventa nera), disporre i gamberetti e quindi coprire con una generosa cucchiaiata di salsa rosa .
Decorare con oliva nera e fettina di peperone rosso .
Servire freddo.
