Dentice al forno in bellavista con verdurine di cottura
Ingredienti
1 dentice da 3\4 kg. freschissima
Olio aglio
Prezzemolo
Vino bianco
Pomodorini
Olive verdi e nere
Zucchine
Carote
Cipolla
Sedano
Patate
Procedimento
Arte in tavola 1

Giro, giro tondo ….
Lavare e togliere le branchie al dentice, quindi stenderla in una teglia da forno sopra un foglio di carta forno.
Condire il dentice con olio aglio prezzemolo e vino bianco , qualche foglia di alloro e fettina di limone .
Mettere in forno e cuocer per 30 minuti a 165 ° c .
Nel frattempo tagliare le verdure tutte in modo regolare .
Togliere momentaneamente il dentice dal forno , aggiunger e le verdure e ultimare la cottura in forno a 180 ° c per altri 40 minuti o quanto richiede la pezzatura del pesce .
Servire il dentice in un vassoio di acciaio con le verdure attorno , quindi effettuare il servizio al gueridon in sala davanti ai commensali .
